You’re in for a delight if you are looking to replace regular chicken nuggets which are usually highly processed and deep fried in unhealthy vegetable oils then I bet this homemade version of chicken nuggets will pass the ‘Real Nuggets’ test with flying colors.

My 5 year old son was highly sceptical once I declared that I would like him try a healthy version of his favorite chicken nuggets from McDonald’s. But I had to try, because loath letting him eat those junky nuggets. To be honest it took some effort to convince him to try one of these nuggets.

These chicken nuggets are really good, they’re a bit unconventional so I wasn’t sure how my son would feel but he actually loved them as much as I did.  They’re baked after being coated with cooked quinoa instead of breadcrumbs which gives them a healthy protein-packed makeover. They’re so yummy I’m not sure I ever want to have the traditional breadcrumb chicken nuggets again!

This recipe redeems these tasty bite sized snacks. They are packed with protein and a very healthy junk/commercial food alternative.

What you’ll need to make Quinoa Chicken Nuggets

  • 1 lbs (450g) Chicken breasts, cut into chunks
  • 1 cup (185g) cooked organic quinoa (Buy this ingredient from Amazon)
  • 1 egg, beaten
  • 1/4 cup (30g) cup parmesan, grated
  • 1 tbsp. dried herbs, of choice

  1. Set oven to 350F (180C). Prepare a baking tray covered with baking paper and evenly spread out the cooked quinoa. Bake for around 20-25 mins, checking often and stirring to avoid burning. Once quinoa is crispy, set aside to cool.
  2. Increase the oven temperature to 390F (200C).
  3. Chop the chicken into chunks. Whisk the egg in a bowl together with the parmesan and herbs. Prepare a separate plate with the quinoa. Dip the chicken first in the egg, then coat with the quinoa.
  4. Place the chicken nuggets on a baking tray covered with baking paper and bake for about 15-20 minutes, until chicken is cooked through.
